Created because pav bhaji deserves a masala that brings depth without overpowering the vegetables.
Buttery warmth. Layered depth. No chilli shortcut.

Size
A bold, buttery-spiced blend that replicates the authentic flavor of Mumbai street stalls. Rich in color and aroma.
Why This Exists
Most pav bhaji masalas lead with chilli heat. We used Kashmiri chilli instead (vivid colour, mild heat) so fennel, cumin and cardamom can actually be tasted, not just felt.
What you’ll notice first, and what’s actually inside: top note to finish.
The colour without the heat
Iconic red, without a spicy eating experience.
The street-food signature
The sweetness that stops it tasting like a generic curry.
The tang that holds it together
Rounds the butter instead of letting it sit heavy.
The slow-cooked impression
Smokiness that reads as hours on the tawa.
Also in the blend
Before You Cook
Butter and masala hit the tawa before the vegetables do.
While You Cook
Colour deepens from orange to proper Mumbai red as it mashes.
At The Table
Someone asks where you got it from.
Not for very spicy food. Add fresh chilli at the table instead.
Not built for dishes outside its lane. Kitchen King handles everyday veg.
Not a shortcut. The mash and the tawa time still matter.
Buttered pav. Mashed mixed vegetables. The smell of the tawa. The defining dish.
After the bhaji is ready, press it into cold butter on high heat for 30 seconds before plating. This creates the tawa crust aroma that makes street pav bhaji distinctive.
Mumbai's second famous tawa dish: cooked rice, vegetables and this blend on a flat tawa.
Use cold, day-old rice. Fresh rice becomes mushy on a hot tawa.
Bread toasted with butter and a small amount of this blend: a version of the Mumbai masala toast sold outside every busy station.
A quick breakfast that tastes like a considered choice.
When to add
With the onion-tomato base, before the vegetables.
How much
1–1½ tsp per 4 servings.
What to avoid
Don't add more for heat. Use fresh green chilli instead.
Storage
Airtight and dark. Protects the Kashmiri chilli colour.
