Most grilling rubs lead with heat and stop there. We built ours around Kashmiri chilli, dry mango and garlic, so you taste flavour first, and the heat builds after.

Before You Cook
The marinade darkens the protein. A decision's been made.
While You Cook
Caramelises on the grill. Raw marinade turns roasted and complex.
At The Table
Flavour first, heat after. You reach for more before you're done.
Not extremely hot. Heat with character, not maximum chilli.
Not a full marinade on its own. Pair with oil and acid.
Not for gravies. Built for dry and semi-dry cooking.

Marinate for at least 30 minutes. Overnight is significantly better: the tang and heat integrate rather than sitting on the surface.
Thighs or drumsticks: the fat in darker cuts carries the blend better than breast.
Score the chicken before marinating. The blend penetrates the cuts and creates more flavour distribution through the meat, not just on the surface.
Toss freshly cooked fries while still hot: the starch absorbs the blend differently when warm.
Season immediately after cooking while the fries are still steaming. The heat blooms the garlic and chilli quickly.
