Why This Exists

Most chhole masalas lean on one note: too sour or too hot. We layered four sources of tang instead, so the gravy gets dark, roasted depth and the chickpeas stay the hero.

Amritsari Chhole

The defining dish. Chickpeas cooked until the gravy is dark, thick and present: exactly what this blend was built for.

Tip

Add the blend early, with the onion-tomato base, and cook for 10 minutes before the chickpeas go in. The depth comes from cooking time, not quantity.

Pindi Chana

Pindi Chana

A slightly drier preparation. The blend's depth works equally well when the gravy is reduced further and clings to the chickpeas.

Tip

Finish with a coal tempering: a glowing piece of coal in a metal bowl, a few drops of ghee, covered for 2 minutes. The smokiness amplifies the black cardamom.

A completely different application: the blend as a finishing seasoning over boiled chickpeas.

Tip

Use half the amount you'd use in a curry. Chaat applications require a much lighter hand.
