Most Kitchen King blends make everything taste the same. We used twenty-one spices in small proportions instead, so the vegetable stays the hero and the masala just adds depth underneath.

The defining dish. Three vegetables, roughly chopped. This blend makes them taste like a considered decision.

Tip

Add after the onion-tomato base has cooked down. Let the blend bloom in oil for 30 seconds before adding vegetables.

Paneer Bhurji

Paneer is mild and shows every quality of the masala around it: one of the clearest tests of a Kitchen King.

Tip

Add the blend with the scrambled paneer, not with the onions. The spice integrates differently.

The real test: cauliflower and potato, two strong-flavoured vegetables that should both still taste like themselves.

Tip

Keep the heat medium. High heat changes the spice faster than the vegetables can absorb it.

½ tsp per 2–4 servings.

What to avoid

Don't add to cold oil. It needs the bloom.

Storage

Airtight and dry. Fenugreek hates moisture.
